Help needed with in store purchase set-up

Hopefully someone can help me with a problem I have and can't seem to solve.

As well as selling on our website, customers can also visit our unit and purchase from us directly. Most of our stock is on the website and I simply create an invoice for customers buying direct when they are in store. My problem is that we also have some products which aren't on the website, but available to customers to purchase in store.

I have set up a category called 'in store' and made this private. I've then set up very simple product listings for those items only available in store (just with a title, options and price so that they will print OK on an invoice). My problem is that I can't find a way to see these when I am in a remote session on the website to create a customer invoice.

I added the private category to my admin user group, but this didn't work. What I am doing at the moment is if a customer wants to buy an in store only item, I am having to add the product to an existing visible category, create the invoice, and then remove it again. But this takes time whilst a customer is waiting to pay and is also really fiddly.

Customers can buy a mixture of in store and website products, so I don't want to create a template and give them a separate manual invoice just for in store only items.

Is there an easier way of doing this? Any help much appreciated!

I think you could achieve this using hidden products that only you can see via the back end or just creste a hidden category with these products in.

If I make the products or category hidden, how can I assign them to an invoice when using a remote session? (sorry if I'm being a bit thick )
