Meta Title

Where do we put the home page meta title and description. I do not want to set up a default meta title and description for each page, i want to write my own for each product or leave some blank, for Google to generate. All i can find is configeration> site options > default title and meta description.
I find this confusing because if i fill these in, is this used system wide. If i also leave some products without one, i do not want this used because Google generates them off the product page.

Edit your home page via the page manager. Look in the meta data tab. You can do this for each static info pages.

For categories and products edit each one and again use the meta data tab.

Do as Dave says which will give you individual (& unique) meta tags, you can add a generic default title and description. It will ensure you cover any page or category / product that you have missed out.
You just need to check occasionally that you do not have any duplicate tags, (google or bing tools will do it) as that will show those you did miss.
